We had the honor of welcoming Ashley to our Coffeeville Jackson café for the official launch of her special drink, Ashley’s Latte. So many of you came out to say hi, enjoy the moment, share hugs, kind words, and show your love and support. It was more than a launch, it was a gathering of hearts around someone incredibly brave. Ashley was joined by her inseparable companion Loaf (her sweet dog) and her brother Jared, making the moment even more special. Seeing our community come together like this, for something bigger than coffee, was truly moving. Thank you for making this launch day unforgettable.

With her dog Loaf — always by her side
In late October 2023, I noticed one of my ear tubes had fallen out, something I’ve dealt with before due to chronic eustachian tube dysfunction. But that same night, I woke up with sharp pain in my neck and discovered a hard lump on the left side. At first, I thought it might be an infection or thyroid swelling, but something felt different.I managed to get a doctor’s appointment for November 10, and over the next few days, the lump didn’t go away... it grew. After a CT scan on November 15, my ENT called me the very next morning. That’s when I heard the words: Papillary Thyroid Cancer. I was alone when I got the call. My dad was out of town for a funeral. I’ll never forget sobbing on the phone, struggling to breathe as I told him the news. It was heartbreaking, especially after everything our family had already been through with my brother’s cancer. Further tests confirmed the cancer had spread to several lymph nodes. I was told I needed surgery, a total thyroidectomy and full neck dissection. On January 8, 2024, they removed my thyroid, 53 lymph nodes, and reimplanted 3 parathyroid glands. My incision stretched across the front of my neck to just below my ear. What followed was a long and painful recovery. I stayed in the hospital longer than expected due to severe calcium deficiency, and had to move back home temporarily for support. I underwent radioactive iodine therapy in February 2024, which left me isolated for days and took a serious toll on my body. Though the first round was completed, I was told I still had significant residual thyroid tissue, with a 20–30% chance of recurrence.In April 2025, I began radioactive iodine surveillance again. This journey has delayed my dream of attending grad school. It’s been physically exhausting, mentally draining, and financially overwhelming. But I’m still here, still fighting, still hopeful. And I’m so grateful for everyone who’s chosen to support me even with something as simple as a cup of coffee. Thank you for being part of my story. —Ashley
The moment we learned Ashley’s story, we knew we had to do something worthy of her strength and courage. As a survivor of thyroid cancer—a silent disease that often goes unnoticed—Ashley has endured a journey that has taken a toll not just physically, but emotionally, mentally, and financially.
At Coffeeville, we chose to respond in the way we know best: by creating a drink with purpose. Ashley’s Latte was crafted to be more than delicious—it’s a way for our community to come together, enjoy something meaningful, and support this incredible young woman. A fighter. A survivor. A true inspiration.
Today, Ashley is embracing life with the same strength and spirit that carried her through the toughest moments. She finds joy in spending time with her family and her beloved brother Jared, enjoying coffee shop visits, music festivals, and cozy days with her loyal dog, Loaf. A curious soul, she loves reading and watching the latest in medical studies—especially those related to cancer. Though her health shifted her grad school path, Ashley is now pursuing a Master’s in Public Health with a dream of researching better cancer treatments and opening health centers for underserved communities. Let’s come together to support her healing and help ease the financial hardship of her journey. One cup at a time.
